Comfort in a Bowl: Apple Cinnamon Walnut Oatmeal
Nothing says cozy morning like apples, cinnamon, and walnuts in a warm bowl of oatmeal! This hearty, plant-based breakfast made with steel-cut oats is chewy, nutty, and naturally gluten-free. Packed with fiber, omega-3s, and antioxidants, it supports heart health, blood sugar balance, and keeps you full all morning. Add cranberries for a tart, fruity twist and you’ve got the perfect start to your day!

Apple Cinnamon Walnut Oatmeal (with Steel-Cut Oats)
Servings: 4, Prep time: 5 minutes, Cook time: 20 minutes
Ingredients:
2 cups water
½ tsp ground cinnamon
¼ tsp sea salt (optional)
⅔ cup steel-cut oats (certified gluten-free if needed)
1 cup chopped fresh apples
¼ cup chopped walnuts
¼ cup fresh or frozen cranberries
A little brown sugar, date sugar, maple syrup (optional, to sprinkle on top if desired)
Instructions:
In a medium saucepan, bring 2 cups of water to a boil.
Stir in the steel-cut oats, cranberries, cinnamon, and sea salt if using. Reduce heat to low and simmer uncovered, stirring occasionally, for 15–20 minutes, or until the oats are tender and most of the liquid is absorbed.
In the last 5 minutes of cooking, stir in the apples for a softer texture, or sprinkle them on top just before serving for a fresher crunch.
Remove from heat and divide into 4 bowls. Sprinkle with walnuts and, if desired, a touch of sweetener. Enjoy warm!

Extra creaminess: Cook oats in half water, half unsweetened plant-based milk.
Batch cook: Make a double batch and reheat with a splash of plant milk for quick breakfasts during the week.
