About the Recipe
This Customizable Granola makes transitioning to a healthy, plant-based diet simple and delicious. Packed with oats, seeds, nuts, and a touch of natural sweetness, it’s versatile enough to suit your taste—add your favorite dried fruits or spices. Perfect for topping yogurt, enjoying with plant milk, or packing for a hike, this granola keeps you energized and satisfied throughout the day.

Ingredients
4 cups GF rolled oats
1 cup brown rice crisps, puffed brown rice, or corn flakes (or a combination of these)
1 1/2 cups seeds and/or nuts
1/2 tsp cinnamon
1/4 tsp ground nutmeg
1/2 cup maple syrup
1/2 cup plant milk, unsweetened
1/2 cup apple sauce
1/4 cup almond butter (or other nut/seed butter)
2 tsps vanilla extract
1/4 cup dried fruit (optional)
Preparation
Preheat the oven to 275 ºF and line a large cookie sheet with parchment paper or silicone mat.
In a large bowl, combine all dry ingredients (except the dried fruit).
Pour all wet ingredients in a small blender and process until smooth.
Pour the wet ingredients into the dry and mix thoroughly to fully blend.
Transfer the mixture to the cookie sheet and bake for 60 minutes, stirring every 20 minutes or so to make sure it browns evenly.
When the 60 minutes is up, turn off the oven but let the sheet in until the mixture dries completely (about 5 hours).
Once cooled, add the dried fruit, if using, and store in an airtight container for up to 3 weeks.
Tip: Alternatively, you can dehydrate the mixture at 105 - 115 °F for 18-24 hours.
Ways to Use Granola
Add it to muffin, cupcake or cookie batter.
Decorate cakes with it.
Make your own granola bars.
Eat it for breakfast or as a snack with plant milk and fresh fruit.
Sprinkle it on your peanut butter toast.
Add it to salads for extra sweetness and crunch.
Sprinkle it on your smoothie bowl.
Put it in a Ziplock bag and bring it on a hiking trip.
Take it with you when travelling.
