These Raw Sweet Potato Chips are a quick, wholesome snack that brings both flavor and nutrition to your plate. Thinly sliced and naturally sweet, they pair perfectly with fresh salsa, greens, or your favorite raw toppings. Minimal prep, maximum health benefits—enjoy a crunchy treat that’s as vibrant as it is nourishing.

Ingredients
1 small sweet potato, peeled, thinly sliced
salsa, fresh
greens and/or tomatoes to top (optional)
Preparation
Peel and slice your potato. Use a mandoline slicer on the thinnest setting or do your best to cut the thinnest slices you can.
Arrange the potato slices in a single layer on a plate.
Scoop some salsa on top, add another layer and keep adding layers until all potato slices are used up.
Finish with a dollop of salsa and to with your favored greens and tomatoes, if desired.
Note: While sweet potatoes can be eaten raw, consuming larger amounts may cause digestive discomfort (such as bloating, cramps, or gas) in some people. Raw sweet potatoes contain small amounts of protease (enzyme) inhibitors, which can make protein digestion more difficult, as well as raffinose—a naturally occurring sugar that can increase gas production. These compounds are significantly reduced by cooking, which is why cooked sweet potatoes are generally easier to digest. If you’re sensitive, enjoy raw sweet potato in moderation or choose cooked versions instead.
