Enjoy a colorful, nutrient-packed meal with this Raw Vegan Spanish Cauliflower Rice. Made with fresh cauliflower, sun-dried tomatoes, avocado, and a medley of vibrant vegetables and herbs, it’s bursting with flavor and texture. A squeeze of lime, a hint of chili, and aromatic spices give it a Spanish flair—all without cooking. Perfect for raw food enthusiasts, busy weeknights, or anyone looking to add more wholesome, plant-based meals to their diet.

Ingredients
1 cup oil-free sun-dried tomatoes, finely chopped
1 head of cauliflower, chopped into rough pieces
1 avocado, quartered
Juice of 1 lime, freshly squeezed
1/2 tsp chili powder
1 tsp cumin
2 Tbsps scallions or red onion, finely chopped
1 red bell pepper, finely chopped
1 large tomato, finely chopped
1/4 cup cilantro, chopped

Preparation
Place the chopped sun-dried tomatoes in a 2-cup Pyrex measuring cup and cover with water. Let soak for at least an hour.
After an hour, pour the water out (you can keep it and use in other recipes) and process the tomatoes in a food processor.
Add the cauliflower, avocado, lime juice, chili powder, and cumin and process until thoroughly mixed. Transfer the mixture into a large bowl, set aside.
Add the chopped scallions and/or red onion, red bell pepper, tomato and cilantro to the bowl with the cauliflower mixture.
Mix all ingredients together, add more spices or lemon juice, if necessary.
Tip: Eat on lettuce leaves, with flax crackers, or serve over salad.
