Thinly sliced or grated beets are combined with shallots or red onions, tangy balsamic vinegar, Dijon mustard, and optional fresh herbs for a simple yet flavorful salad. Ingredients
3 large beets
1 large shallot or red onion
1/2 cup balsamic vinegar
1 tablespoon Dijon mustard, or more, to taste
Freshly ground black pepper, to taste
Minced parsley, chives, spring onion, or dill (optional)
Preparation
Peel the beets and the onion.
Grate the beets by hand and mince the onion, then combine. Alternatively, use a food processor fitted with a metal blade, pulse the beets and onion until shredded (do not puree).
Transfer the shredded mixture to a bowl.
Mix in the balsamic vinegar, Dijon mustard, and freshly ground black pepper. Taste and adjust the seasoning as needed.
If desired, add minced herbs before serving.
