About the Recipe

This Apple-Pumpkin Yogurt Parfait is a delicious, plant-based way to satisfy sweet cravings while keeping things wholesome. Creamy pumpkin puree and applesauce are lightly spiced with cinnamon and pumpkin spice, layered with unsweetened non-dairy yogurt, sweet dates, and gluten-free granola for a satisfying crunch. Quick to assemble and naturally vegan, it’s perfect for a cozy breakfast, snack, or dessert that embraces the flavors of fall.

Ingredients

  • 1 15-ounce can organic pumpkin purée

  • 1 1/2 cups unsweetened applesauce

  • 1 1/2 tsps cinnamon

  • 1/2 tsp pumpkin spice (OR 1/2 tsp cinnamon)

  • 1/2 cup dates, pitted

  • 16 ounces unsweetened plain non-dairy yogurt

  • 1 cup GF granola (store-bought or homemade)

  • jars or glasses for serving

Preparation


  1. Place the pumpkin purée, applesauce, cinnamon, pumpkin spice and dates in a blender and process until smooth.

  2. Layer pumpkin mixture, yogurt and granola into jars or glasses and serve.
