About the Recipe

This No Nut Mac & Cheese Sauce proves you don’t need nuts—or dairy—to enjoy a creamy, cheesy classic. Blended potatoes and carrots create a velvety base, while nutritional yeast, lemon, and warm seasonings deliver that familiar, comforting flavor everyone loves. Naturally vegan, oil-free, and allergy-friendly, it’s an easy, wholesome sauce that pairs perfectly with pasta, veggies, baked potatoes, and more. A family favorite that tastes indulgent while staying true to whole-food, plant-based principles.

Ingredients

  • 2 cups potatoes, diced, cooked

  •  1 cup carrots (or sweet potatoes), diced, cooked

  •  1/2 cup water (or the water from cooking the veggies)

  •  1/3 cup plant milk, unsweetened

  •  1 Tbsp lemon juice, freshly squeezed

  •  1/2 cup nutritional yeast

  •  1/2 tsp garlic powder

  •  1/2 tsp onion powder

  •  1 tsp salt, or more to taste

  •  dash of cayenne (optional)

Preparation

  1. Cook the carrots and potatoes together. Strain the cooking water but keep 1/2 cup.

  2. Blend all ingredients in a high-powered blender until smooth and creamy.

  3. Store in the refrigerator for up to a week.


 

How to use it:

  • Add to pasta to make Mac and “Cheese”

  • Mix with brown rice, add beans, corn, salsa and spinach or other greens...

  • Pour over steamed veggies

  • Eat with tortilla chips or baked pita wedges

  • Serve as a dip for raw or lightly steamed veggies
