Baba Ghanoush
Not sure what to do with eggplant? Try this delicious spread or dip!

Creamy, smoky, and full of flavor, this classic Baba Ghanoush is made without oil and roasted to perfection in the air fryer. It’s a deliciously healthy dip for fresh veggies, pita, or my Hash Brown “Crackers.”


Baba Ghanoush


Ingredients

  • 1 large or 2 medium eggplants

  • 2 large cloves garlic

  • 2 Tbsp lemon juice (about 1 lemon), more if needed

  • ¼ cup tahini

  • ½ tsp ground cumin

  • ¾ tsp salt, or to taste

  • 2 Tbsp chopped cilantro or fresh flat-leaf parsley, for garnish (optional)

  • Pinch of smoked paprika, for garnish (optional)

  • Red pepper flakes, for garnish (optional)


Directions

  1. Preheat your air fryer to 390°F.

  2. Cut off the stem, halve the eggplants lengthwise, and place them in the air fryer with the cut sides down.

  3. Roast until the skin collapses and the inside is soft throughout, about 35–60 minutes.

  4. Scoop out the flesh with a large spoon and discard the skin.

  5. Place the eggplant flesh, garlic, lemon juice, tahini, cumin, and salt in a blender and blend until smooth.

  6. Transfer to a serving dish and sprinkle with chopped herbs, smoked paprika, and red pepper flakes, if desired.

  7. Serve on Hash Brown “Crackers,” pita bread, or with carrot sticks, bell pepper strips, cucumber slices, or other fresh vegetables.
